At the time of the interview (May), the menu was “Satsuki (May) menu”. The cuisine at Marucho Ryokan is refined kaiseki cuisine, centered around seasonal ingredients that reflect the time of year. Let's introduce each dish one by one. The meal began with an aperitif of loquat liqueur. Made from loquats grown in the suburbs of Taketa city, the liqueur was a perfect match to start the meal. Depending on the season, it is changed to strawberries, cherries, and bitter orange liqueur. The appetizer was freshly drawn yuba (tofu skin). This yuba is made from carefully selected soybeans and clean local water. |

The appetizer platter featured a beautiful arrangement of 11 items: boiled Japanese parsley (seri), shrimp fishcake, Japanese ginger sushi, bamboo leaf sushi, simmered konnyaku, fuki (butterbur) wrapped in tofu skin (Toji-maki style), tempura fritter broad beans, salmon with lotus root, thick omelet, roasted duck breast, and spring cabbage. The seri (Japanese parsley) is from the Serikawa River that runs in front of the inn. The bamboo leaf sushi was shaped like a chimaki (rice dumpling) and topped with sea bream. |
